Acetic acid preparation by Vinegar Quick process: An aqueous solution of ethyl alcohol is mixed with oxidized in the presence of the enzyme micro derma aceti. The wooden vat is fitted with two wooden slits with holes. Between these plates is a filling of beech wood, moistened with an old vinegar solution that is a major source of mycoderma aceti. A 10% aqueous solution of ethyl alcohol is gradually reduced from the top of the vat and the air is transferred in a controlled amount through holes near and below the vat. Ethyl alcohol is added to acetic acid. This process is called the rapid vinegar process because vinegar forms very quickly.
