With increasing pressure, the boiling point of a liquid rises and falls with decreasing pressure. Pure water has a boiling point of 1000 degrees Celsius at one atmosphere of pressure. Steam is not permitted to escape from a pressure cooker. Inside the cooker, the vapour pressure rises to about 1.75 times that of the atmosphere. As a result of the increased pressure, water boils at around 1200 C to 1250 C.
